Texas Caviar
Ingredients:
Caviar:
1 cup chopped red pepper
1 cup chopped green pepper
1 cup chopped onion
1 sm jar of chopped pimentos
1 sm can of jalapenos, drained & chopped
1 can pinto beans, rinsed & drained
1 can black beans, rinsed & drained
1 can of shoepeg corn or fiesta corn, drained
Dressing:
1 cup olive oil
1/2 cup cider vinegar
1/2 cup sugar
1/2 tsp salt
1/2 tsp pepper
Instructions:
Mix and boil dressing mixture until sugar is dissolved. Cool. Pour over caviar mixture. Marinate overnight. Serve with tortilla chips.
